For reasons I will not bore you with, I can no longer eat chocolate. Yes, I know…a travesty! So these days I am always looking for some kind of chocolate substitute. I haven’t found the perfect alternative yet but I will always be looking. Until then, these Orange White Chocolate Chip Cookies are simply delicious! They are buttery and creamy with sweet white chocolate and a background flavor of citrusy orange. Kind of shortbready (we will all just pretend that shortbready is a word). Wild Mushroom Crostini

Wild Mushroom Crostini

One of my favorite things in the world is mushrooms sauteed in butter with some garlic, salt and pepper…and then sprinkled with some parmesan cheese. I usually just make some sauteed mushrooms and eat them straight from the skillet, or over a baked potato, with some pasta, or with a steak, smothering some chicken, or…well, you get the point.

Recently, I was making some Shrimp Piccata (recipe to come very soon!) and wanted a crostini of some sort.  A package of wild mushrooms (really, how wild are any mushrooms these days?) looked especially enticing at my grocery store so I decided that a Wild Mushroom Crostini was in my future – How exciting!

These Wild Mushroom Crostini have a crunchy toasted baguette covered with a meaty, garlicky, cheesey, creamy mushroom sauce. A little heavy cream, some fontina and parmesan cheeses and those tasty mushrooms make this crostini perfect as an appetizer, or if you are like me they might be the full meal! We love our creamy salads here in the South. I am no exception. There is just something about a salad coated in a mayonnaise based dressing. It’s comforting and refreshing all at the same time. Add the taste of ranch dressing and I’m sold!

This Ranch Pasta Salad came about one day as I was searching for a way to use the rest of my favorite Buttermilk Garlic Ranch Dressing. It’s got that kick of garlic with the cool taste of a buttermilk ranch. Yum! Make up a batch for a dinner salad this week and then use the leftovers for this zesty Ranch Pasta Salad!

Personal Pepperoni Pita Pizza

Whether you are cooking for one or your entire family, personal pizzas make everyone happy. You get what you want on your pizza and so does everyone else. I like the idea of setting out a variety of ingredients and letting everyone build their own personal pizza. One of the best ways to make this happen is to use pitas as your pizza crust. A pita is the perfect personal pan pizza size, is thin enough to not overwhelm the perfect pizza bite but is also thick enough to create a sturdy pizza base. 

Today, I was focused on pepperoni and green peppers. When I have pepperoni pizza, I prefer the taste of the zesty pepperoni in every bite. I accomplish this by buying my pepperoni in thin slices in the deli of my grocery store (sometimes called sandwich pepperoni). Rather than the thicker slices of small rounds of pepperoni, I have thin slices that are perfect for layering on my pita. I also think that a homemade pizza sauce, which takes about ten minutes by the way, is the way to go. The jarred stuff just doesn’t give me the freedom to make this Personal Pepperoni Pita Pizza my own.

So, the health powers that be say I should be eating fish twice per week in the interest of living longer and healthier. I can do that…I think. I have never been a huge seafood eater. Growing up I pretty much ate shrimp, and that was it. No salmon, tuna, crab or lobster. As an adult I generally still eat mild seafood such as tilapia or mahi mahi. Or the ultimate in healthy…crab or lobster masked by a delicious, creamy mayonnaise and cheese concoction. Yummy!

My sister makes a delicious salmon with an apple glaze so I knew I could handle salmon. Maybe she will let me post her recipe here some day (hint, hint, Jennifer).  The one thing I really wanted though was something especially easy to make. That’s how Roasted Salmon with Balsamic Mustard Glaze was born. Place salmon on parchment paper, season, roast in oven, add glaze. See? Bacon Makes it Better: Roasted Cauliflower and Bacon

Have you ever heard the saying that ‘everything tastes better with bacon’? I don’t generally subscribe to this theory…I am way too interested in variety for that kind of thinking. In this case though, I believe the saying to be true.  Somehow taking some veggies that we do not eat every day and cooking them in bacon drippings and adding the crumbled bacon, makes them absolutely delectable. Add some garlic, onions and crunchy buttery bread crumbs and you have taken this dish to another level. So here you have it…the usually boring cauliflower with the ingredient that makes everything taste better… bacon. I hope you enjoy this delicious side dish as much as I did.

Try Something New: Kale Chips – Two Ways

Kale Chips - Two Ways

No…I am not going all “healthy” on you…although I could use a bit of healthy eating right about now. Actually, I was recently checking out some recipes online when a recipe for Kale Chips caught my attention. For some reason (likely the description of how tasty and “Southern Style” these chips are), it seems that Liz at www.southerncharmnola.com  had me hooked! I have heard from numerous people that kale chips do not taste “healthy”, rather they taste like whatever flavors you apply to them combined with a satisfying crunch. I knew I had to give these a shot. 

I tried the kale chips two ways….Liz’s “Southern Style” Kale Chips, and then one more personal recipe for a Garlic Spiced Kale Chip. I gotta say….both were pretty tasty. Now, these are not a replacement for potato chips. How can you compare potatoes to kale? No, these kale chips are a treat all on their own. They have the crispy texture you are looking for but have the great taste of the spicy kick of Liz’s recipe or the garlic flavor of my take on Liz’s inspiration. Maybe I should combine the two flavors into one…Hmmmmm.  

Whether you choose the spicy or the garlic kale chips, give these Kale Chips a try. Don’t be afraid…they are a perfect unique snack that will really surprise you! Now that I think about it more I could see these kale chips crumbled on top of soup, served with a soft and creamy cheese, or maybe tucked into a grilled cheese and tomato sandwich…guess I have more kale chips to make!

Hot Roast Beef Sandwiches with Horseradish Mayonnaise and Crispy Shallots

In the interest of watching my weight (watching it do absolutely nothing these days!), I generally lean towards the turkey, no mayo kind of sandwich. Sometimes I get a little crazy and go for the ham and Swiss cheese. Not today! Today I want a hot sandwich that is overflowing with all the fixin’s! 

This Hot Roast Beef Sandwich with Horseradish Mayonnaise and Crispy Shallots is a perfect way to beat the sandwich blahs! It sounds more complicated than it actually is. I simply sautéed some deli roast beef, mixed some horseradish and mayo, and fried up some shallots…all in about 15 minutes. Add aged sharp cheddar cheese, an onion roll, lettuce and tomato and you have a hearty, filling, and amazingly delicious sandwich. 

Whether you crave a tasty hot sandwich for lunch or dinner put this Hot Roast Beef Sandwich with Horseradish Mayonnaise and Crispy Shallots at the top of your list. I am confident you will truly enjoy it!

Hot Roast Beef Sandwich with Horseradish Mayonnaise and Crispy Shallots Recipe

Ingredients

3 Tbsp Mayonnaise

2 1/2 Tbsp Prepared horseradish

4 Shallots, thinly sliced

2 Tbsp Olive oil

2 Tbsp Vegetable oil

1/2 lb Deli roast beef, thinly sliced

4 Slices Sharp cheddar cheese

Salt and Pepper to taste

4 Onion rolls, sliced in half

4 Slices Tomatoes

Romaine lettuce leaves
Directions

  1. Stir mayonnaise and horseradish until well mixed. Taste for horseradish flavor, adjusting to personal taste. Set aside.
  2. Heat sauté pan over medium heat. Add a splash of olive oil, not the full tablespoon. Add the roast beef in batches. Cook until lightly browned. Add a splash of olive oil between batches. Sprinkle with salt and pepper when hot. Set aside.
  3. In the same pan over medium high heat, add vegetable oil. When hot, add shallots and a pinch of salt and pepper. Fry until golden brown and crispy. Remove to paper towels to drain.
  4. Toast onion rolls. Spread mayonnaise mixture on both sides liberally.
  5. Layer roast beef and cheese to bottom half of roll. Put under broiler for 3-5 minutes to melt cheese.
  6. Add crispy shallots, tomato and lettuce. Top with remaining half of onion roll. Serve warm.

I woke up craving a hearty breakfast, but I really didn’t want to have a mess to clean up afterwards. By making a sandwich, there is only one pan to clean so I made this Maple Bacon Breakfast Croissant. I love combining the flavors of maple syrup with salty bacon and a buttery croissant. This breakfast is kind of like a giant pancake breakfast with eggs and bacon…but without all that work!
